The base of this recipe is a store-bought pizza dough by Simple Mills. It comes together easily, has minimal ingredients, and gives an overall herby flavor (thanks to oregano and garlic). It pairs well and adds to the overall flavor experience of the buffalo jackfruit flatbread. The pizza dough can also be shaped into two smaller pizzas/flatbreads if different toppings are desired (we have a barbecue vs. buffalo sauce debate in our house anytime this is made, can you relate?).
For toppings we are using red onion, green olives, chickpeas, and banana peppers. The combination of these, along with the bold and tangy buffalo jackfruit just work and are balanced out with a mellow vegan ranch dressing (with a sprinkle of hemp seeds for boosted nutritional value). How to make a vegan flatbread with jackfruit
- Prepare pizza dough, shape into a long oval, and bake for 15 minutes
- Prepare toppings, remove dough from the oven and add toppings
- Place back in the oven and bake for another 15 minutes

Jackfruit: alternatively use tofu or chickpeas.
Tofu tip: press the tofu prior to marinating it in the buffalo sauce.
Chickpea tip: rinse and drain the chickpeas before coating with buffalo sauce.
Toppings; follow your heart blue cheese or parmesan cheese, pickles, chives, garlic, sliced cabbage, jalapeños, shaved Brussels sprouts, shallots, marinated kale, etc.

How to store flatbread pizza
Store the flatbread in the fridge for 2-3 days, in a covered container. To reheat, place in the oven for 5-10 minutes or in a warm skillet, covered for 3-5 minutes.

Vegan Buffalo Jackfruit Flatbread Pizza
Ingredients
- Simple Mills almond flour pizza dough
- 2 tablespoons apple cider vinegar
- 2 tablespoons avocado oil
- ⅓ cup water
Buffalo Jackfruit
- ⅓ cup buffalo sauce (I used primal kitchen)
- 1 can organic young jackfruit
Toppings
- ½ red onion, diced
- 1 cup chickpeas
- ¼ cup banana peppers
- handful of sliced green olives
Optional Pizza Toppings
- drizzle of ranch dressing (I used Follow Your Heart)
- hemp seeds
- Follow Your Heart Blue Cheese or Parm Cheese
- shaved Brussels sprouts, spinach or other greens
Instructions
- Preheat oven to 350°
- Prepare pizza dough according to package instructions (whisk together ACV, oil, and water in a medium-sized mixing bowl. Add pizza dough mix and stir until combined).
- Drizzle a bit of oil onto a piece of parchment paper and place dough onto it. Use some of the oil on your hands and form into a long oval shape (or desired shape).
- Slide parchment paper onto a baking sheet and place into the oven for 15 minutes.
- While the dough cooks, prepare the buffalo jackfruit and the toppings.
- Drain the jackfruit from the brine and rinse well. In a bowl, crumble the jackfruit into strand like pieces with your hands or two forks. Add buffalo sauce and stir to combine.
- Next, dice the onion and prepare other toppings (I used chickpeas, green olives, scallions and banana peppers, but feel free to use any of the suggestions listed above).
- Remove pizza crust from the oven, drizzle with additional buffalo sauce if desired and top with buffalo jackfruit and toppings.
- Bake for another 15 minutes. Remove and let cool for 5 minutes before slicing. Optional; drizzle with ranch or buffalo sauce and top with a sprinkle of hemp seeds
