Guacamole Potato Skins

Crispy seasoned potato skins stuffed with edamame guacamole

These mini guacamole potato skins are a MUST for;

INGREDIENTS

Crispy potatoes:  - red baby potatoes  - avocado oil  - salt + pepper - garlic powder

INGREDIENTS

Edamame guacamole:  - avocados  - edamame  - cilantro  - jalapeño slices - red onion  - hemp seeds - lime juice  - garlic granules - salt

STEP 1

Wash, cut, and season baby potatoes. Add directly to a baking sheet with a drizzle of oil.

STEP 2

While the potatoes bake, prepare the guacamole.

STEP 3

Remove potatoes from oven. Once cool enough to handle, scoop out the center of each.

STEP 4

Scoop guacamole into each potato. Garnish with red pepper flakes, cilantro, and/or hemp seeds.

STEP 5

Serve immediately with additional guacamole and sliced veggies (optional)
