Vegan Buffalo Cauliflower Mac and Cheese

This vegan buffalo cauliflower mac and cheese is; creamy, cheesy, spicy, bold, & absolutely delicious! BONUS: It's made with legume based pasta and hemp seeds for additional nutrients and protein. 

Step 1

Sear the cauliflower

Add cauliflower florets to a skillet and steam. Add oil, salt, pepper, and garlic once tender. Sear on all sides then coat in buffalo sauce.  Total time: 10 minutes 

Step 2

Make the macaroni and cheese

Cook pasta of choice (see blog post for my gluten-free recommendations) until al dente. Drain and rinse. Add vegan butter & cheese, garlic, hemp seeds, and pepper.  

Step 3

Combine and bake

Combine buffalo cauliflower & the mac and cheese. Add to a baking dish and top with GF breadcrumbs (see blog post for easy homemade options). Bake for 10-15 minutes! 

Step 4

Enjoy!
