These chocolate chip cookie dough granola clusters are packed with crisp oats, rich vanilla flavor, and plenty of chocolate in every bite. Loaded with chunky clusters and all the comfort of a classic chocolate chip cookie.

Ingredients

  • 1 ½ cup gluten-free rolled oats
  • cup chopped walnuts
  • ¼ cup hemp seeds
  • ¼ teaspoon himilayan pink salt or sea salt
  • cup pourable cashew butter
  • ¼ cup pure dark maple syrup
  • 1 tablespoon pure vanilla extract
  • ½ cup vegan chocolate chips

Instructions

  • Prep: Preheat oven to 315℉. Line a large baking sheet with parchment paper and set aside.
  • Combine dry ingredients: Add the oats, walnuts, hemp seeds, and salt to a large mixing bowl and stir to combine.
  • Add wet ingredients: Add the cashew butter, maple syrup, and vanilla extract and stir until evenly combined.
  • Add chocolate chips: Fold in chocolate chips.
  • Press and bake: Transfer the granola to the prepared baking sheet and firmly press it into an even layer. Check for any large sections without chocolate chips and sprinkle a few more over the top if needed. This ensures you'll get chocolate in each bite.
    Bake for 15-20 minutes, or until golden around the edges.
  • Cool: Let the granola cool for at least 10-15 minutes before breaking it apart. As it cools, the granola will continue to crisp and form large crunchy clusters.
