Equipment

  • food processor
  • measuring cups and spoons
  • medium sized pan for toasting walnuts

Ingredients

  • 1 heaping cup raw walnuts, toasted
  • 7-8 medjool dates, soaked in hot water for 3-4 minutes or until soft
  • 1 heaping tablespoon pourable almond butter or peanut butter
  • 1 tablespoon pure vanilla extract
  • 2 tablespoons water + more if needed
  • ¼ scant teaspoon sea salt
  • 3 tablespoons cacao powder
  • flaky sea salt for topping

Instructions

  • Prep the dates and walnuts: Soak the dates in very hot water for 3–4 minutes, then drain and pit if needed. Meanwhile, toast the walnuts in a dry pan for 3–4 minutes, stirring often, until fragrant and just slightly darker.
  • Blend the base: Add the softened dates, nut butter, vanilla, sea salt, and water to a food processor. Blend for 20-40 seconds, scraping down the sides as needed, until thick and well combined. The mixture won’t be completely smooth; small bits of date should remain.
  • Add cacao and walnuts: Add the cacao powder and toasted walnuts. Pulse for 15–30 seconds, or until combined, leaving small pieces of walnut throughout.
If the batter is too dry, add a splash of water as needed. If too wet, add additional walnuts or a teaspoon of cacao powder.
  • Scoop and chill: Using a #40 cookie scoop, or 1.5–2 tablespoons per bite, scoop into 10–12 balls. Top with flaky sea salt and refrigerate for at least 30 minutes before serving.
