Vegan Peppermint White Russian

Ingredients

Rocks glass rim

  • 1 tablespoon semi-sweet chocolate chips
  • 1 crushed candy cane

Cocktail

  • ¼ cup strongly brewed coffee, cold brew, or espresso (chilled)
  • ¼ cup creamy plant-based milk (flax, oat, almond, or coconut)
  • 1 shot (1 ½ oz) vodka of choice
  • 1 tablespoon vanilla vegan creamer (optional)
  • ½ teaspoon date syrup (or maple syrup) *
  • 1/16 teaspoon peppermint extract **
  • handful of ice

Instructions

  • Prepare rim: crush a candy cane and add to a small plate. Add chocolate chips to another small plate and microwave for 30 seconds - 1 minute. Flip a rocks glass upside down and press the rim into the melted chocolate, then directly into the crushed candy canes until coated. Place in the fridge to chill while you prepare the cocktail.
  • Prepare cocktail: add all ingredients for the cocktail to a cocktail shaker and shake vigorously. Remove cocktail glass from the fridge and carefully add a handful of ice. Strain cocktail into the glass and garnish with a candy cane.

Notes

*If you are using vegan creamer that is heavily sweetened, feel free to omit the date syrup. 
**Peppermint extract flavor is strong, so be very careful adding it into the cocktail shaker. Truly only add 1/16th of a teaspoon, if more is needed, only add a tiny drop at a time (or add a sprinkle of crushed candy cane instead). 
For an extra creamy cocktail: feel free to top the cocktail with an extra splash of coffee creamer. 
For an extra minty cocktail: use a few pieces of a vegan peppermint chocolate candy bar instead of chocolate chips (for the rim of the glass) OR sprinkle a bit of the very finely crushed pieces of candy cane into the drink.
