½cupcoconut yogurt(+ more if doing a stacked popsicle, see notes below)
¼cupcoconut water*
Chocolate drizzle option
¼cupvegan white chocolate
1teaspoonrefined coconut oil
3tablespoonscrushed pistachios
Boozy option
3oz (2 shots)of rum or vodka of choice
Instructions
Add all ingredients to a high-speed blender and blend until a creamy consistency is achieved. Pour into popsicle molds and place in freezer for 6-8 hours. *For a layered popsicle, place a heaping tablespoon of coconut yogurt into the mold followed by a tablespoon of the blended mix, repeat until the mold is full. *If making the boozy version, add vodka/rum to the blender with the other ingredients.
Remove and enjoy! *For the chocolate drizzle, add chocolate and coconut oil to a microwave safe glass or bowl and melt for 30 to 45 seconds, remove and stir well. Drizzle over frozen popsicles, top with crushed pistachios (optional) and enjoy (the chocolate hardens immediately, but if it doesn't feel free to add back to the freezer for a few minutes)
Notes
If your blender is having difficulty blending the frozen strawberries, add a splash (or more) of coconut water to help it blend. Want fruit pieces in your popsicles? Dice strawberries into small bite-sized pieces and add to the blended ingredients. Blitz for 2-3 seconds and then add to the popsicle molds.
