- Strawberries

How to make strawberry popsicles with yogurt
- Add all ingredients to a blender and blend until creamy
- Pour into popsicle molds and place into the freezer for 6-8 hours or until frozen solid
- Remove from freezer and enjoy (or top with melted white chocolate and then enjoy!)

Substitutions
Strawberries: fresh or frozen strawberries are both great options in this recipe.
Coconut water: coconut water gives the popsicles a subtle coconut flavor as well as additional electrolytes. I haven't tried substituting this ingredient, however, orange juice, apple juice, pineapple juice, or a combination of your favorite fruit juices should also work. Coconut yogurt: I used vanilla coconut yogurt (I love So Delicious & CocoJune) but any plant-based yogurt (stick to vanilla, plain, or strawberry flavors) will work for this recipe.
Variations
For a white chocolate variation: I used Pascha's white chocolate bar, but baking chips can also be used. Alternatively, substitute for dairy-free semi-sweet chocolate.
The melted chocolate can be drizzled over the popsicle or fully dipped.
- Drizzle melted chocolate with a spoon by quickly moving the spoon back and forth over the popsicles. Top with crushed pistachios or other nut of choice.
- Dip the top of the popsicle into the melted chocolate and immediately top with crushed pistachios, other nut of choice, or crushed GF cookies 👀
For a layered popsicle: add a tablespoon of coconut yogurt followed by a tablespoon of the blended mix, repeat until the mold is full.
For a swirled popsicle: follow the steps for a layered popsicle, then place a knife or skewer into the mold and swirl gently.
Storing strawberry popsicles
Keep the popsicles in the freezer for about a month or so. If serving them at a party or gathering, remove them from the molds and place directly over ice, keeping them out of direct sunlight.
If using a chocolate drizzle, drizzle directly before eating. They will not fit back into the molds with the drizzle and the risk of freezer burn (and less fresh tasting popsicles) is high.

Easy Strawberry Popsicles (Dairy-Free)
Equipment
- popsicle molds
- blender
- measuring cups
Ingredients
- 2 cups fresh or frozen strawberries (I used frozen)
- ½ cup coconut yogurt (+ more if doing a stacked popsicle, see notes below)
- ¼ cup coconut water*
Chocolate drizzle option
- ¼ cup vegan white chocolate
- 1 teaspoon refined coconut oil
- 3 tablespoons crushed pistachios
Boozy option
- 3 oz (2 shots) of rum or vodka of choice
Instructions
- Add all ingredients to a high-speed blender and blend until a creamy consistency is achieved. Pour into popsicle molds and place in freezer for 6-8 hours. *For a layered popsicle, place a heaping tablespoon of coconut yogurt into the mold followed by a tablespoon of the blended mix, repeat until the mold is full. *If making the boozy version, add vodka/rum to the blender with the other ingredients.
- Remove and enjoy! *For the chocolate drizzle, add chocolate and coconut oil to a microwave safe glass or bowl and melt for 30 to 45 seconds, remove and stir well. Drizzle over frozen popsicles, top with crushed pistachios (optional) and enjoy (the chocolate hardens immediately, but if it doesn't feel free to add back to the freezer for a few minutes)
