Ingredients for frozen strawberry shortcake bites
- Raw cashews: adds unsaturated fats, protein, magnesium, and copper. Also helps to provide a creamy texture to the interior of the balls
- Dates: adds subtle sweetness to the balls, as well as additional magnesium and copper
- Strawberries: sweetness, antioxidants, and vitamin c
- Vanilla extract: enhances the other flavors
- Lemon juice: adds a hint of citrus
- Sea salt: adds additional flavor and brings out the sweetness of the strawberries
- Vanilla cookies & freeze-dried strawberries: used to give a crunchy sweet exterior to replace the crumbly biscuits used in strawberry shortcake recipes.
How to make vegan strawberry shortcake balls
1. Add ingredients to a food processor and blend on high for 30 seconds to 1 minute.
2. Shape into balls using a small ice cream scoop or tablespoon.
3. Roll the balls in crushed freeze-dried strawberries and cookies.
Substitutions and variations
Vanilla extract: swap for ¼-1/2 teaspoon of vanilla powder
Lemon juice: it's recommended, but the citrus can be replaced with water in a pinch.
Sea salt: swap for kosher or iodized salt
Vanilla cookies: I used Homefree vanilla mini cookies, but any vanilla or light-flavored cookie will work. Alternatively use a vanilla granola or coconut and hemp seeds.
For a sweeter treat, dip the bites into melted white chocolate. To melt the chocolate add 1 cup of chocolate chips and 1 tablespoon of refined coconut oil to a microwave safe bowl or glass. Microwave for 1 minute and stir well.
Storing frozen strawberry shortcake bites
Store the bites for 1-2 months in the freezer. If opting to enjoy them as an energy ball, you can also store in the fridge for up to a week.

Frozen Strawberry Shortcake Bites
Equipment
- food processor

Ingredients
- 1 ½ cup raw cashews
- 10 pitted medjool dates
- 1 cup organic hulled strawberries*
- 1 teaspoon vanilla
- 1 tablespoon lemon juice
- ¼ teaspoon + an extra pinch of sea salt
Coating
- ½ cup crushed cookies
- ¼ cup crushed freeze-dried strawberries
Optional superfoods
- 2 tablespoons hemp seeds, chia seeds, coconut, and/or other crushed nuts
Instructions
- Add cashews, dates, strawberries, lemon juice, vanilla extract, and salt to a food processor.
- Pulse until ingredients are combined. The consistency should have tiny bits of cashews, dates, and strawberries in it. *see photo in the "how to" section for reference
- Using an ice cream scoop or a tablespoon, create bite-sized balls and place on a plate. It should result in 15-20 bites, depending on the size desired. Refrigerate for 30 minutes or until firm. *If they stick to the plate, this means they need more time to chill.
- While the balls chill, crush the freeze-dried strawberries and cookies. Blend* them on high for 3-5 seconds or add them to a bowl and use a glass to crush them. Add to a shallow plate or bowl. *blend them together or separately
- Remove the balls from the fridge and roll each one in the cookie & strawberry crumble until coated (or in one of the superfood options). Enjoy!
