This fresh tomato salsa is my homemade take on Chipotle’s fresh tomato salsa. Bright, fresh, and slightly tangy from pickled jalapeños, it’s just as good on its own as it is spooned over grain bowls, salads, loaded toast, and more.

Fresh tomato salsa ingredients
- Vine tomatoes: use firm, bright red tomatoes, finely diced for the best texture
- Red onion: adds a mild sharpness and slight sweetness. Dice finely so it blends evenly.
- Pickled jalapeño: a simpler way to add both heat and tang.
- Fresh cilantro: brings brightness and a fresh, slightly citrus note.
- Fresh lime juice: adds acidity and keeps the flavors balanced.
- Salt: ties all the flavors together. Use sea salt or Himalayan and adjust to taste.
How to make fresh tomato salsa
1. Prep the tomatoes
Quarter the tomatoes and remove the core, pulp, and seeds. Dice the remaining flesh and add to a bowl.
2. Dice and chop the remaining ingredients
Mince the red onion and pickled jalapeños, and chop the cilantro. Add to the bowl with the tomatoes.
3. Season and taste
Add the lime juice and salt, then gently toss to combine. Taste and adjust with more lime or salt as needed.
4. Serve
Let the salsa sit for 5–10 minutes before serving so the flavors come together. Chill in the refrigerator for 10–15 minutes if you prefer it cold or plan to make it ahead.

Substitutions and variations
- Tomatoes: vine tomatoes tend to have more flavor than Roma, but any firm, ripe tomatoes will work.
- Adjust the heat: use more or less pickled jalapeños depending on your preference.
- Acidity: lime juice can be replaced with a splash of jalapeño brine for a tangier flavor. Chipotle’s version uses a combination of lime and lemon juice.
- Fresh jalapeños: can be used, but pickled adds the tang that gives this salsa its signature flavor and a more mellow, balanced heat.
- Mango: add finely diced mango for a subtle sweetness that balances the heat and acidity.
Storage
Store in an airtight container in the refrigerator for up to 3 days. The salsa will become more watery as it sits, so stir and drain before serving if needed. For the best texture, enjoy within the first 1–2 days.

- 2 cups fresh vine tomatoes, diced ~2-4 tomatoes depending on size
- ½ cup red onion, minced
- ½ cup fresh cilantro, stems removed and leaves packed, then chopped
- ¼ cup pickled jalapeños, minced
- ½ teaspoon sea salt
- 1 tablespoon lime juice
Instructions
