This creamy peanut butter oatmeal is made with quick oats and chia seeds for an easy stovetop breakfast that comes together in just 5 minutes. The peanut butter melts directly into the oats as they cook, creating a thick, creamy oatmeal that feels rich without much effort. Naturally sweetened with maple syrup and a touch of cinnamon, it’s a filling breakfast that feels cozy, genuinely satisfying, and quick enough for busy mornings.

Ingredients for creamy peanut butter oatmeal
- Quick oats: necessary for this quick oatmeal recipe. They cook in just a few minutes and create a smooth texture that pairs well with chia seeds and peanut butter.
- Plant milk: adds a subtle richness and helps create an ultra-creamy texture. Cashew and almond milk are my go-tos in this recipe for their smooth, nutty flavor.
- Chia seeds: I love oatmeal with chia seeds, as they add texture and help create a thicker, creamier oatmeal as it cooks. The additional fiber and protein are a win too.
- Natural peanut butter: melts directly into the oats for a rich, balanced flavor throughout. Crunchy peanut butter adds a delightful texture, but creamy also works well.
- Pure maple syrup: naturally sweetens the oatmeal. Date syrup also works well.
- Vanilla extract: adds a rich, slightly sweet flavor that blends well with the peanut butter and maple.
- Cinnamon: optional, but recommended as it adds warm sweetness.
- Salt: enhances and ties all the flavors together.

How to make creamy peanut butter oatmeal
1. Combine ingredients
Add the quick oats, chia seeds, milk, peanut butter, maple syrup, vanilla, cinnamon, and salt to a small saucepan.
2. Simmer
Place over medium heat and stir everything together. The heat will help melt the peanut butter into the oats. Continue stirring (at least every 10–15 seconds) for 3–4 minutes, or until the oatmeal is thick and creamy.
3. Top and serve
Transfer to a bowl and top with chopped nuts, frozen wild blueberries, and any other toppings you desire.

Best toppings for peanut butter oatmeal
- Frozen wild blueberries
- Sliced banana
- Chopped nuts (roasted peanuts and raw pecans are my favorite)
- Hemp seeds
- Cinnamon
- Extra peanut butter
- Date syrup or an additional drizzle of maple syrup
- Cacao nibs
- Strawberry slices
- Toasted coconut
Storage and reheating
Oatmeal is best enjoyed warm, right after cooking. That said, leftovers can be stored in the fridge (toppings and all, minus the banana) for 1–2 days and enjoyed cold straight from the refrigerator, similar to overnight oats with a slightly thicker texture.

FAQ
Quick oats create a softer, creamier texture and cook much faster, which is what gives this oatmeal its creamy consistency in just 5 minutes. Rolled oats will work, but the texture will be heartier and will need ~5 extra minutes of cooking time.
Natural peanut butter (no added oils or sugars) works especially well here because it melts perfectly into the oats. I prefer crunchy peanut butter here because it adds texture, but creamy peanut butter also works well and creates a smoother oatmeal.
Quick oats, chia seeds, and milk help create a thick, creamy texture. Stirring frequently while the oatmeal cooks also helps everything to combine. Remove from heat when the oatmeal is just starting to reach your desired consistency.
Yes. The chia seeds help thicken the oatmeal, but the recipe still works without them. Decrease the milk to ⅔ cup, or increase the oats to ⅓ cup.
