Equipment

Ingredients

  • 2 cups fresh vine tomatoes, diced ~2-4 tomatoes depending on size
  • ½ cup red onion, minced
  • ½ cup fresh cilantro, stems removed and leaves packed, then chopped
  • ¼ cup pickled jalapeños, minced
  • ½ teaspoon sea salt
  • 1 tablespoon lime juice

Instructions

  • Quarter the tomatoes and remove the core, pulp, and seeds. Dice the remaining flesh and add to a bowl.
  • Mince the red onion and pickled jalapeños and chop the cilantro. Add to the bowl with the tomatoes.
  • Add the lime juice and salt, then gently toss to combine. Taste and adjust with more lime for acidity, jalapeños for heat, cilantro for freshness, or salt as needed.
  • Let the salsa sit for 5–10 minutes before serving so the flavors come together. Chill for 10–15 minutes if you prefer it cold or are making it ahead. Gently stir again before serving.
