Peanut Butter and Jelly Overnight Oats

Everything you love about a PBJ sandwich, packed into a jar. Creamy peanut butter and sweet fruit jam swirled into smooth, hearty overnight oats.

Equipment

  • measuring cups & spoons
  • 14 oz sealable jar

Ingredients

  • ½ cup gluten-free rolled oats
  • ½ cup + 1 tablespoon unsweetened vanilla (or plain) almond milk or dairy-free milk of choice
  • 2 tablespoons natural, pourable peanut butter
  • 1 tablespoon raspberry jam
  • 1 tablespoon flaxseed meal
  • 1 tablespoon maple syrup
  • pinch salt

Instructions

  • Add all ingredients to a 14-oz sealable jar and whisk together well.
  • Seal the jar and shake well until everything is combined. Open and stir if you notice any clumps.
  • Place in the fridge overnight or for at least 4–6 hours
  • Remove from the fridge, stir well, and top with fresh berries, a drizzle of peanut butter, and nuts of choice.

Notes

Add 1 teaspoon of vanilla extract if using plain, for a vanilla flavor if desired 
Raspberry jam is one of my favorites, but feel free to substitute it with strawberry, blueberry, cinnamon pear, or your favorite.
