These peanut butter and jelly overnight oats are my gluten-free answer to a childhood classic. A good PBJ sandwich is hard to replicate without the bread, but this gets you all the same flavors in a jar. Creamy peanut butter and swirls of sweet fruit jam in every bite. Sweet, nutty, and slightly tart.

- Rolled oats: use old-fashioned gluten-free rolled oats for the best texture. Quick oats will result in mush, and steel-cut oats will be unpleasantly chewy.
- Non-dairy milk: unsweetened (or vanilla) almond milk is my go-to for the additional notes of nuttiness. If you are using a plain plant milk, add a teaspoon of vanilla extract.
- Natural peanut butter: opt for peanut butter with just peanuts and salt listed in the ingredients. Crunchy or creamy both work.
- Jam: use a jam with minimal ingredients for the best results. Raspberry is my go-to, but strawberry, blueberry, or your favorite fruit combination work. If you're in the New England area, Sidehill Farm Jams has great options.
- Flaxseed meal: adds heartiness and a subtle nuttiness that's reminiscent of whole grain bread. It's what gives these oats that true PBJ sandwich feel.
- Pure maple syrup: the sweetness ties everything together without overpowering the jam or peanut butter.
- Salt: just a pinch to balance out the sweet and salty notes.
How to make peanut butter and jelly overnight oats
1. Combine and whisk
Add all ingredients to a 14-oz (or larger) sealable jar and whisk together well.
2. Shake
Seal the jar and shake well until everything is combined. Open and stir if you notice any clumps.
3. Refrigerate
Place in the fridge overnight or for at least 4–6 hours.
4. Serve
Remove from the fridge, stir well, and add additional berries and a drizzle of peanut butter.

Tips
- Consistency: This recipe is written for a thick, creamy texture. If it's too thick when you pull it from the fridge, add a splash of milk and stir well.
- Peanut butter: Crunchy peanut butter works but the peanut bits soften overnight. If you want crunch, add crushed peanuts on top just before serving.
- Jar size: Use a jar that's at least 14oz with a sealable lid. The oats expand as they soak, and you want room to add toppings.
Variations
- Milk of choice: Soy, coconut, cashew, or oat milk work well. Oat milk adds an extra oaty depth.
- Fresh berries instead of jam: Mash a handful of fresh raspberries or strawberries directly into the oats instead of jam for a less sweet, fresher flavor.
- Sweet topping: A handful of mini vegan white chocolate chips or cacao nibs for crunchy sweetness. Drizzle with melted chocolate, dark chocolate tahini, or brownie oat butter for a dessert-style bowl.
- Fruit: Fresh sliced banana, peaches, mango, or apples on top. Dried cranberries, raisins, or goji berries work well too.
- Nut butter: swap peanut butter for almond butter or cashew butter.
- Protein boost: Stir in a few tablespoons of vegan Greek yogurt, decrease the amount of milk slightly to keep the consistency thick.

Overnight oat storage and meal prep
Store in a sealed jar or airtight container in the fridge for up to 5 days. If the oats thicken overnight, add a splash of milk and stir well before eating.
I like making a few jars at a time with different jams - one raspberry, one blueberry, one strawberry. I'm not a fan of eating the same thing the same way every day, so this is an easy way to keep the overnight oats interesting and tasty without much effort.
