Pineapple Cucumber Juice Recipe with Ginger
This pineapple cucumber juice is crisp and refreshing. The cucumber balances the sweetness of the pineapple while the ginger adds just the right amount of zing. After a long day in the sun, an ice cold glass of this juice is unbeatable.

- 1 fresh pineapple, peeled and quartered
- ½-3/4 of a large cucumber, peeled
- 2 inch knob of fresh ginger, peeled
- 1 Honeycrisp apple, cored and sliced
Prep: Trim the top and bottom off the pineapple, then remove the outer rind. Cut the pineapple into smaller pieces that fit easily into your juicer. Slice the apple, then peel the cucumber and ginger.
Juice: Turn the juicer on high and feed the pineapple, cucumber, apple, and ginger through slowly. Tuck the ginger between larger pieces of produce to keep it from getting tossed into the discard bin.
Serve: Pour the juice over ice and serve immediately for the best flavor.
Peeling the cucumber is optional. Peel it for a bright yellow juice, or leave the skin on for a greener color.
The recipe makes about 35 oz of juice, depending on the size of the produce, which is roughly 3-4 servings.
