Vegan Eggnog Martini

martini or coupe glass
cocktail shaker + jigger
- 4 oz (½ cup) vegan eggnog (see blog post above for store-bought options)
- 1 oz (2 tablespoons) vodka
- ½ teaspoon date syrup*
- dash cinnamon (optional, but recommended)
- large handful of ice
Add all ingredients to a cocktail shaker and shake vigorously for 10-15 seconds. Strain into a coupe or martini glass. Garnish with star anise and a dash of cinnamon (or nutmeg) if desired.Alternatively, add to a rocks glass or stemless wine glass and top with vegan whipped cream. (I used So Delicious CocoWhip). Add a cinnamon stick and garnish with an additional dash of cinnamon.
Optional cinnamon sugar rim: on a small plate combine 1 tablespoon of cane sugar with ¼ teaspoon of cinnamon. Wet a paper towel and wipe the rim of a coupe or martini glass (making it slightly damp). Turn the glass upside down and press into the cinnamon sugar mix until coated. Prepare the cocktail according to instructions and strain into the prepared glass carefully.
*Do not substitue the date syrup, simply omit it if you do not have any on hand.
