These cinnamon coconut date bites are a soft and chewy no-bake treat layered with warm spice, toasted coconut, and nuts. What I love most is how balanced they are: sweet from the dates, rich from the nuts, and finished with just enough cinnamon and toasted coconut to make each bite feel like a treat.

Why I love these cinnamon coconut date bites
The ingredients are simple and nourishing, but together they make such a satisfying bite-sized dessert. The pecans and cashews provide just enough nuttiness and sweetness that blends seamlessly with the dates, coconut, and cinnamon.
I purposely kept little bits of dates and nuts when pulsing everything in the food processor so that each bite has a little bit of everything in it.
Rolling the bites in toasted coconut is the star of the show. I tested the bites a few different ways, including keeping them plain and rolling in raw coconut shreds, but toasting was the clear winner. It was the finishing touch that made the bites feel complete and somehow reminds me of a (much healthier) cinnamon Munchkin, especially with the extra dusting of cinnamon on top.

Ingredients you'll need
- Medjool dates: their sweet caramel flavor works wonderfully in this recipe. Soak them in hot water first if they aren't soft and sticky; this helps bind the ingredients and keep everything together.
- Raw pecans: add a warm, buttery, almost vanilla-like flavor.
- Raw cashews: add subtle crunch and light creaminess to each bite.
- Shredded coconut: adds a soft chew and that craveable coconut flavor.
- Vanilla extract: adds extra warmth and rounds out the sweetness.
- Ground cinnamon: adds just enough warmth and spice without overpowering the other ingredients.
- Salt: just a pinch helps to make all the flavors pop.
- Toasted coconut shreds: rolling the date balls in toasted coconut adds additional caramel notes, nuttiness, and warmth. The lightly crisp coating is essential - don't skip it!
How to make
1. Prep the dates and toasted coconut
Soak the dates in hot water for 3-4 minutes to soften them. Drain and remove the pits if needed.
Meanwhile, add coconut shreds to a dry pan over medium heat. Toast for 1-2 minutes, stirring frequently, until lightly golden and fragrant. 1-2 minutes. Remove from heat and set aside.

2. Combine ingredients
Add the pecans and cashews to a food processor and pulse for 5-7 seconds, until broken into small chunks and pieces.
Add the softened dates, raw coconut shreds, vanilla, cinnamon, salt, and water. Blend for 20-40 seconds, stopping to scrape down the sides as needed, until the ingredients are combined and hold together when pressed. Don't overblend; the goal is little bits of dates and nuts throughout.

3. Scoop, coat, and chill
Using a #40 cookie scoop, or about 1.5-2 tablespoons per bite, tightly scoop the mix and roll each bite in the toasted coconut. I usually do this directly in the pan, but a shallow bowl or plate works just as well.
Place the rolled bites into the fridge for at least 30 minutes to chill before enjoying.

Storage
Once the bites have chilled for at least 30 minutes, store in an airtight container in the fridge for up to 1 week.
For longer storage, freeze for up to a month. Let the bites sit at room temperature for a few minutes before enjoying.

📋 Recipe
Cinnamon Coconut Date Bites
Equipment
- medium skillet or pan, for toasting the coconut
- food processor
- measuring cups & spoons
- #40 cookie scoop, optional but helpful
Ingredients
- 1 cup medjool dates, soft and pitted (about 8-10 dates)
- 1 cup raw pecans
- 1 cup raw cashews
- ⅓ cup unsweetened shredded or desiccated coconut
- 2 tablespoons water
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon
- pinch salt (roughly ¼ teaspoon)
Topping
- scant ⅓ cup toasted coconut shreds
- a few dashes of ground cinnamon
Instructions
- Prep the dates and coconut: Soak the dates in hot water for 3–4 minutes to soften, then drain well and remove the pits if needed. Meanwhile, toast the coconut in a dry pan over medium heat for 1–2 minutes, stirring often to prevent burning, until lightly golden and fragrant. The longer the coconut toasts, the deeper and nuttier the coconut flavor becomes.
- Pulse the nuts: Add the pecans and cashews to a food processor and pulse for 5–7 seconds, until broken into small chunks and pieces.
- Combine ingredients: Add the softened dates, shredded coconut, vanilla, cinnamon, salt, and water. Blend for 20–40 seconds, stopping to scrape down the sides as needed, until the mix holds together when pressed. Don’t overblend; we want little bits of dates and nuts to remain.
- Scoop and coat: Using a #40 cookie scoop, or about 1½–2 tablespoons per bite, tightly scoop the mixture and roll each bite in the toasted coconut. Finish with a light dusting of cinnamon. You'll get 18-20 bites, depending on your scoop size.
- Chill: Refrigerate for at least 30 minutes before eating so the bites can chill and firm up.
