If I opened a sandwich shop, this cheddar apple sandwich would be first on the menu. Tart Granny Smith apples and sharp cheddar cheese are a classic pairing, but the true show stopper is the homemade jalapeño cranberry spread. Sweet, spicy, tangy, and a little nutty. It's made from 5 ingredients and makes every bite better than the last.

Cheddar apple sandwich ingredients
Jalapeño cranberry spread:
- Vegan mayo: the creamy base of the spread. Substitute with mashed avocado for a lighter, less tangy option.
- Dijon mustard: adds complexity and tanginess. Use a stone-ground mustard for less of a kick, or horseradish for a more intense punch.
- Dried cranberries: adds a slightly sweet texture, which balances the heat from the jalapeños and mustard.
- Chopped walnuts: adds a subtle nuttiness and crunch. Omit for a nut-free version.
- Pickled jalapeños: the heat and tang that make the spread.
Sandwich:
- Granny Smith apple: the best apple for this sandwich. Honeycrisp or Pink Lady works for a sweeter variation.
- Vegan cheddar cheese: see the section below for brand recommendations.
- Crisp baby lettuce: adds a fresh crunch. Swap with spinach, arugula, or greens of choice.
- Gluten-free bread: or bread of choice if you're not gluten-free (ciabatta, sourdough, or multiseed work well).
How to make a cheddar apple sandwich
1. Make the spread
Add the mayo, mustard, diced pickled jalapeños, chopped cranberries, and minced walnuts to a bowl and stir to combine. Set aside or refrigerate until ready to use. The spread can be made up to a day ahead.
2. Toast and assemble
Toast the bread to your preferred level of golden. Spread the jalapeño cranberry spread on one slice. Layer with thinly sliced apple, vegan cheddar, and lettuce. Top with the second slice (optional: use the spread on this slice too for additional flavor), cut in half, and serve immediately.
Best vegan cheddar cheese for sandwiches
These are the three brands I've used in this sandwich and can recommend:
- Violife mature cheddar and standard cheddar slices
- Follow Your Heart medium cheddar
- Field Roast creamy original chao slices (not cheddar technically, but delicious in this recipe and a great alternative if you can't find a cheddar.
Ways to toast sandwich bread
- Toaster or toaster oven: the easiest option. Toast on your preferred setting for 4–5 minutes.
- Skillet or griddle: add a small amount of vegan butter or avocado oil to a warm skillet. Toast each slice for 2–3 minutes per side until golden. This method gives you a crisp and rich result.
- Oven: preheat to 350°F. Place bread directly on a baking sheet and bake for 3–5 minutes per side. No butter needed, but can be added if desired.

Variations
- Grilled cheese: swap the lettuce for spinach or kale and butter both sides of the bread. Press on a warm skillet until golden and the cheese is melted.
- Caramelized apple: slice the apple and cook in a skillet with a drizzle of maple syrup until soft and caramelized. A sweet and indulgent variation, perfect for cold fall nights.
- Add protein: grilled tofu or falafel.
- Swap the spread: use the jalapeño cranberry spread as a base for other sandwiches. It pairs well with any combination of cheese and greens.
Storage
The jalapeño cranberry spread keeps well and actually gets better after a few hours in the fridge as the flavors have time to come together. Store covered for up to 2 days.
The assembled sandwich is best eaten within 2–4 hours. The toasted bread holds up well, so it's a good option to pack and take on the go.
Slice the apple directly before assembling. Cut apples can brown and lose some of their crispness.
