Store-bought granola is quick and easy snack, but they tend to be pricy and lack fresh, bold flavors. In particular, peanut butter granola (that actually tastes like peanut butter) seems impossible to find. Crafting a batch of my own peanut butter granola seemed like the only solution!
It's a really simple mix of a nuts, coconut, seeds, and peanut butter so it's still a quick and easy snack option. The best thing about it? It's oat-free, gluten-free, grain-free, and vegan!

8 simple ingredients are all you need to make this homemade granola recipe. Grab these goodies and let's get to baking:
- Unsweetened coconut flakes: adds sweet crunchiness + fiber
- Chopped pecans: add buttery richness & heart healthy fats
- Peanuts: unsalted peanuts work best!
- Pumpkin seeds: use raw, unsalted, and unroasted pumpkin seeds. They are packed with magnesium, zinc, iron & protein.
- Creamy peanut butter: a natural peanut butter that is pourable works best! Trader Joe's organic peanut butter and Teddie's peanut butter are my favorite brands. Use a peanut butter that only lists peanuts in the ingredients. Salted peanut butter is ok, just don't add additional salt!
- Maple syrup: provides natural sweetness and helps the granola stick together
- Vanilla extract: adds subtle vanilla flavors and ties everything together
- Sea salt: add a large pinch if using unsalted peanut butter. Omit if using salted peanut butter.

First, add dry ingredients to a large bowl and stir to combine.
Secondly, add wet ingredients and stir to coat.
Thirdly, evenly spread onto a baking sheet lined with parchment paper. Finally, bake for 18 minutes or until golden brown.
Top tip: after removing from the oven, let the granola cool for at least 30 minutes. This helps create crunchy clusters!
Variations
Customize your granola by switching up the nuts or adding in a few other ingredients. Here are some ideas to get you started:
- Nuts: raw almonds, walnuts, or cashews can be used instead of the nuts that are included in the recipe as written. Swap or add as you wish!
- Dried fruit: after baking, add dried banana chips, chopped dates, or strawberries.
- Cacao nibs: adds rich cocoa flavors with added antioxidants!
- Chocolate: once the granola has cooled, add in vegan mini chocolate chips or semi-sweet vegan chocolate chips. For a super chocolatey variation, add chocolate to warm granola (it will melt and create delicious clusters).
- Dairy-free white chocolate chips: adds creamy sweetness!
- Shredded coconut: add shredded coconut for more coconut flavors
- Quinoa: adds additional fiber and protein + extra crispiness and crunchiness
- Superfood additions: hemp seeds, chia seeds, sunflower seeds, or flax seed meal

Easy Peanut Butter Coconut Granola Recipe

Ingredients
- 1 cup unsweetened coconut flakes
- ½ cup chopped pecans
- ½ cup raw peanuts roasted also works!
- ½ cup pumpkin seeds, unsalted and unroasted
- ¼ cup flaxseed meal, hemp seeds, and/or chia seeds *see note below
- ½ cup creamy, all-natural peanut butter make sure it's pourable!
- ¼ cup pure maple syrup
- 1 teaspoon vanilla extract
- pinch salt
Instructions
- Preheat oven to 300℉ and line a baking sheet with unbleached parchment paper.
- Combine coconut chips, pecans, peanuts, pumpkin seeds, and seeds of choice* in a medium-large mixing bowl. Add peanut butter, maple, and vanilla directly to the bowl and stir to combine.
- Pour granola onto the baking sheet and spread evenly using the spatula. Use the spatula and gently press down to ensure the nuts are evenly spread - this will also help create crunchy clusters!
- Bake for 18-20 minutes, or until golden brown. Remove and let cool for at least 30 minutes before enjoying (this is necessary for clusters to form!).
