FAQs about chocolate covered strawberries

What is the best chocolate for covering strawberries?

Semi-sweet chocolate is my favorite, but dark or vegan white chocolate are also great options.

What chocolate is vegan friendly?

Enjoy life semi-sweet mini chocolate chips is the best vegan chocolate to use for coating the strawberries. They frequently go on sale at Whole Foods, so keep an eye out for them!

Can vegan chocolate be melted?

Yes, add vegan chocolate to a microwave safe bowl or double broiler to melt with a bit of coconut oil to prevent the chocolate from burning or clumping together. Stir frequently.

Why won't chocolate stick to my strawberries?

Chocolate will not stick if the strawberries have any water on them. The key to great chocolate covered strawberries is drying the strawberries extremely well before dipping into melted chocolate. Use a dish cloth or paper towel and dry each individually before dunking it into the melted chocolate.

Should strawberries be warm or cold before dipping in chocolate?

The strawberries are being dipped into warm chocolate, so room temperature is best. If they're very cold, this will result in the chocolate chilling too quickly, resulting in a less smooth appearance and it will be tricky to add toppings (if you're using them).

Do you leave the leaves on chocolate covered strawberries?

Yes, the greens should be kept on the strawberries as they are what you hold onto when dipping into the melted chocolate.

Should chocolate covered strawberries be refrigerated or frozen?

I prefer them refrigerated, but they can be frozen and then placed in the fridge to de-thaw. It's important to leave them uncovered when refrigerating them, as storing them in a container results in the strawberries "sweating", creating unwanted moisture and sogginess.

How do you spice up chocolate covered strawberries?

Drizzle them with additional melted chocolate, or top them with nuts, seeds, or sprinkles! Check out the topping section of the blog post below for more ideas.

Tips for recipe success

  • Fresh strawberries: use fresh, crisp strawberries for the best results.
  • Dry strawberries: it is vital to dry strawberries well. After washing them, dry them well with a dish cloth. Grab another dish cloth and dry each strawberry separately before dipping into the melted chocolate.
  • Stir chocolate: as you melt the chocolate, be sure to stir every 30 seconds for the first minute and every 15-20 seconds after that. This prevents the chocolate from burning and ensure even melting.
  • Remove excess chocolate: to prevent the chocolate from pooling, gently scrape one side of the strawberry on the glass as you remove the berry from the melted chocolate.

Toppings for chocolate dipped strawberries

These vegan chocolate covered strawberries are delicious as is, but if you're looking to spice them up, try out some of these topping ideas;

  • Drizzle of melted vegan white chocolate (Enjoy Life, Pascha, or Sjakks)
  • Shredded vegan white chocolate
  • Peanut butter (for best results, mix a tablespoon or more into the melted chocolate)
  • Coconut shreds
  • Finely crushed pistachios, peanuts, or other nut of choice
  • Sea salt
  • Vegan sprinkles (Whole Foods or Supernatural)
  • Hemp seeds / hemp hearts

Storing vegan chocolate covered strawberries

After chilling, the strawberries will last for a few hours at room temperature (depending on your climate/house temperature).

Store chocolate covered strawberries in the fridge, uncovered for up to two days.

Do not cover chocolate covered strawberries when storing. Strawberries are naturally high in water. As a result, the strawberries will "sweat" and create unwanted moisture (AKA soggy strawberries).

Vegan Chocolate Covered Strawberries

Prep Time10 minutes mins
Chill20 minutes mins
Total Time30 minutes mins
Course: Dessert

Equipment

  • microwave safe glass or bowl
  • parchment paper + baking sheet

Ingredients

  • 16 oz container of fresh strawberries (~20 strawberries)
  • ¾ cup semi-sweet vegan chocolate chips (I used Enjoy Life mini chocolate chips)
  • 1 teaspoon coconut oil (unrefined or refined)

Instructions

  • Prep: Wash the strawberries and then dry them very well (this ensures the chocolate sticks to the strawberries). Line a baking sheet with unbleached parchment paper.
  • Melt chocolate: add chocolate chips and coconut oil to a microwave safe glass. Add to the microwave for 1 minute 30 seconds, checking and stirring every 30 seconds.
*to prevent burning, check every 10-15 seconds for the last 30 seconds.
  • Dip: dry each strawberry again with a dish cloth or paper towel before holding onto the green leaves and dipping each into the melted chocolate.
As you remove the berry, gently scrape the backside of the strawberry to remove excess chocolate (this prevents a pool of chocolate from forming). Place directly onto the parchment paper.
Adding toppings? Place desired topping on to a plate and roll the dipped strawberry in the topping until coated. Alternatively, sprinkle dipped strawberry with desired topping immediately after placing onto the parchment paper. Check out the blog post for topping ideas.
  • Chill: place in fridge to chill for 20-30 minutes, or until chocolate has hardened. Remove and enjoy!

Notes

Storing: chocolate covered strawberries should be stored in the fridge, uncovered. This prevents the strawberries from "sweating" and creating unwanted moisture underneath the harden chocolate.
For a chocolate drizzle: remove strawberries from fridge after the chocolate has harden and use a piping bag or spoon and drizzle with additional melted chocolate. Place back in the fridge to harden for another 20 minutes. Remove and enjoy.
