How to make sweet potato toast in the oven
- Wash and dry the sweet potato. Then, cut the ends off. Slice into ¼ - ½ inch thick slices.

Tips for making baked sweet potato toast
- Sharp knife: using a very sharp, large knife makes cutting the sweet potatoes easier. I used an 8 inch chef's knife.
- Cutting board: to ensure your cutting board doesn't slip, wet the bottom, then place on the countertop.
- Sweet potato thickness: slice sweet potato into ¼ to ½ inch thick slices. Slicing too thin results in burnt toast and slicing too thick results in the sweet potato being raw in the middle).
- Cooking time: ovens vary so watch the sweet potatoes closely your first time cooking them. I bake for 20 minutes, then flip and bake for an additional 5 (in a gas oven). Time needed may also vary based on the thickness of your sweet potato.
Variations
- I have not tried this recipe with purple or white sweet potatoes, but they should work just the same (with slight taste variations).
- Slice vertically for long toast-like pieces (I chose not to do this method as it's much harder to get equal thickness without wasting a lot of the sweet potato). It's also equivalent to an arm workout, but if that's what you're looking for... go for it!
- Baked sweet potato toast can also be cooked in an air-fryer or toaster oven, adjust time and temperature as needed.
Can you cook sweet potato toast in a toaster? Although it is possible, I do not recommend cooking raw sweet potato slices in the toaster. The sweet potato slices do not cook evenly and it takes many rounds (5+) of toasting to achieve an edible slice.
Contrarily, reheating the baked sweet potato slices in the toaster is preferred and results in a quick and easy breakfast or snack option!
Baked sweet potato toast toppings
Savory or sweet toppings can be added to the sweet potato toast. I prefer doing a mix of both, but try out a few and see what works for you. Here are some of my favorite combinations to enjoy for breakfast, lunch, or dinner;
Savory sweet potato toast topping ideas:
- Hummus, radish slices, and arugula (or microgreens of choice)
- Avocado, cilantro, red pepper flakes and lime juice
- Tofu scramble and hot sauce
- Melted vegan mozzarella (or parmesan), pesto, & red pepper flakes
- Avocado, everything but the bagel seasoning, and sauerkraut (my favorite avocado toast combination)
- Melted vegan cheddar cheese, tomato slices, avocado, garlic & salt
- Cashew cream cheese, crispy tofu, diced red onion
- Cashew cream cheese and sauerkraut
- Pesto, avocado slices (or hummus) & hemp seeds (or toasted nuts)
- Guacamole, topped with additional cilantro and fresh lime juice and/or salsa
- Hummus, crumbled falafel and vegan feta cheese
Sweet topping ideas;
- Peanut butter and jam
- Dark chocolate tahini with sea salt
- Cashew butter and mini chocolate chips (I use Enjoy Life semi-sweet)
- Almond butter, banana and oat-free granola
- Nut butter, chia seeds, and berries of choice
- Vegan butter & cinnamon (optional: coconut sugar)
- Granola butter, chocolate chips, and Dandie's marshmallows
- Peanut butter, cacao nibs, and apple slices
Storage and reheating tips
Store the baked sweet potato slices in the fridge for up to a week. To reheat, add slices to a microwave, or toaster (just like a piece of bread) or toss back in the oven until warm.
Additionally, the slices can be frozen; reheat in the toaster on the frozen bagel setting.

Baked Sweet Potato Toast
Equipment

Ingredients
- 1 large orange sweet potato*, washed and dried well
- toppings of choice (see blog post for TONS of ideas)
Instructions
- Preheat oven to 425°F. Line a baking sheet with unbleached parchment paper.
- Prep sweet potatoes: Wash and dry sweet potato well. Cut into ¼-1/2 inch slices. Place slices onto baking sheet, ensuring slices do not overlap.
- Bake: Once oven is preheated, place on middle rack and bake for 20-25 minutes, or until golden and crisp on the top. If desired, remove and flip after 20 minutes, then place back in the oven for another 4-6 minutes. Add toppings of choice and enjoy!
